A La Carte Restaurant Management (ALCRM) is a consulting and coaching company based in Toronto, Canada. Owner Chef Patrick Kleinmann has 30+ years of hospitality experience and uses a client-focussed approach to helping restaurants succeed. He and his team offer strategies, solutions, skills, management and operational training for new and established restaurateurs–all with the end-user in mind–the customer. Our consulting process starts with asking questions about the customer’s experience with dining, service, and his or her brand experience.

Pastry Chef and Chef de cave, a true Frenchman by blood, culture and spirit, Patrick Kleinmann is fuelled by his passion for style, warmth and a true blend of perfection and down to earth hospitality. In demand for his strategic collaborations and highly skilled efforts in developing word-famous restaurants, he is no stranger to being courted by the likes of restaurateurs Umberto Menghi, Jean-Paul Bucher and Uli Prager (who started Movenpick in Europe). Working for the industry’s finest years ago, allowed Patrick to serve Hollywood’s best including actors Halle Berry and Al Pacino, sports legend Wayne Gretzky, Jim Balsillie, the Prince of Monaco and R & B singer Usher.
At the beginning of his career, Kleinmann was lured into the world of travel, exotic sights and foods, and hospitality at its peak. Kleinmann served as a restaurant manager for Club Med, travelling to exotic locales including Vittel, Cairo, Egypt, Senegal, and Turks and Caicos. Equipped with years of knowledge and skills to own, operate and manage restaurants, Kleinmann started his own consulting company called A La Carte Restaurant Management in Toronto, Canada. Serving full and quick-serve restaurants, his company built a solid foundation for specializing in helping start-up restaurants succeed. He showed restaurateurs how to increase their profits and establish strength in the marketplace, with the belief that “every restaurant needs to pursue one niche.” Kleinmann’s years of exposure to the ups and downs of restaurant management primed him to also develop a broad-based training program for restaurateurs looking to upgrade the skills of their teams.
Always looking for his next business venture Kleinmann kept his own restaurant management skills honed when he took over La Petite France in 2007, an intimate French bistro in west Toronto. After revamping the décor and adding his personal French flavour and touch to the menu, the restaurant drew a strong repeat customer following. This paved the way for his warm leadership and the staff’s service excellence to shine as one of the best in the city.
Today, it is Kleinmann’s proactive, roll-up-your sleeves kind of work ethic and authentic ability to make his clients feel warm and welcomed that gives him a distinguishing edge in the industry. With an uncharacteristic quality for a restaurateur, his non-aggressive leadership style attracts many to his business world. It is because it encompasses a clear understanding of all roles in the culinary industry and a firm belief in a “silver platter treatment” for clients.

About Jean-Pierre Boué, Associate Partner
Over the past 27 years, Jean-Pierre has been involved in all major sectors of the Food Service Industrie He started working with one of the largest Group in Europe, Cidelcem Industries where he has been trained in cooking but also in Marketing, Business Development as well as Equipment Manufacturing.
In Canada Jean-Pierre founded and owned Grande Cuisine Systems Inc.a company specialized in high end cooking equipment for star Chefs.Among his clients, the Culinary Institute of America, The Saint Regis Hôtel, Daniel Boulud,Charlie Trotter… In Toronto Jean-Pierre advised the Select Bistro when moving to it’s new location and recently Mogette Bistrot .Jean-Pierre also operated Lafayette Bistrot which was rated by the National Post as one of the best 10 new restaurants in Toronto.
Today, Jean-Pierre is putting all his experience in A la Carte, joining force with Patrick Kleinman for the benefit of the customers.
